January is National Soup Month

Vegetable lentil soup in a slow cooker is the perfect meal to start a new year. Soup is the ultimate satisfying comfort food and can also be a healing and healthy meal. January is National Soup Month which makes sense to us in the northern states where we need cozy meals to help keep us warm. For example, it is sunny and a balmy 31 degrees here in Michigan today! A few weeks ago I shared another warm and savory chicken and noodles dish that you might enjoy on a winter evening. Not only will this vegetable lentil soup warm you up but it is also a great option to include as a meal after a season filled with decadent celebratory food (basically October through December for us). Meals that include nutrient dense ingredients are a great way to reset your habits in a new year.

Vegetable Lentil Soup in a Slow Cooker: Simple and Easy

I love meals that I can throw together using ingredients in my pantry. Part of the reason I decided to make a vegetable lentil soup is that we had some veggies that were on the verge of going bad. I’m sure I am not the only one that buys veggies with the best intentions, but then finds them going bad before being eaten. Without food prep or a plan for use, there are times where they end up going to waste. Wasting healthy food is not good for the budget, the environment, or our health!

A Super Way Eat Your Veggies

Vegetable Lentil Soup is a “super” way to squeeze in the recommended daily amount of vegetables for healthy adults. This amount ranges from about 2-4 cups per day. Most adults are not consuming this amount consistently on a daily basis. I find that when I cook my vegetables as part of a dish like soup, that I am much more likely to eat the volume that is recommended. This is especially true during winter months where I usually don’t crave cold crunchy veggies.   • Slow Cooker


  • 32 oz Vegetable Broth
  • 1 ½ cup baby carrots
  • 1 head broccoli
  • 1 can diced tomatoes lightly drained
  • ¾ cup celery
  • ¾ cup onion diced
  • 1 each bay leaf
  • ½ cup lentils
  • 1 cup spinach optional


  • Prepare vegetables: dice onion and celery, chop broccoli into bite size pieces, drain canned tomatoes.

  • Dump it all into the slow cooker! It can't get easier.

  • Cook on high for about 3 hours or until veggies and lentils are cooked to your liking.
  • Remove the bay leaf and serve. Top each bowl of soup with a bit of mozzarella or parmesan, or serve as a side with a sandwich.
  • Refrigerate or freeze remaining portions for easy meals during the week.
