Vegetable Soup in Slow Cooker

Savory vegetable lentil soup made in a slow cooker. A filling and easy recipe to enjoy on its own or paired with a sandwich.

Ingredients
  

  • 32 oz Vegetable Broth
  • 1 ½ cup baby carrots
  • 1 head broccoli
  • 1 can diced tomatoes lightly drained
  • ¾ cup celery
  • ¾ cup onion diced
  • 1 each bay leaf
  • ½ cup lentils
  • 1 cup spinach optional

Method
 

  1. Prepare vegetables: dice onion and celery, chop broccoli into bite size pieces, drain canned tomatoes.

  2. Dump it all into the slow cooker! It can't get easier.

  3. Cook on high for about 3 hours or until veggies and lentils are cooked to your liking.
  4. Remove the bay leaf and serve. Top each bowl of soup with a bit of mozzarella or parmesan, or serve as a side with a sandwich.
  5. Refrigerate or freeze remaining portions for easy meals during the week.
