- Prepare vegetables: dice onion and celery, chop broccoli into bite size pieces, drain canned tomatoes.

- Dump it all into the slow cooker! It can't get easier.

- Cook on high for about 3 hours or until veggies and lentils are cooked to your liking.
- Remove the bay leaf and serve. Top each bowl of soup with a bit of mozzarella or parmesan, or serve as a side with a sandwich.
- Refrigerate or freeze remaining portions for easy meals during the week.
