This recipe for chicken and noodles made in a slow cooker is so easy and great for a chilly evening! When I struggle with deciding what to have for dinner, or wait until the last minute this is an easy go to meal. You can keep the ingredients for this recipe as staples in your pantry. When you are ready to make it you just need to have chicken on hand to be able to throw it together. This meal is so easy to make and resembles a super easy version of chicken and dumplings. As a family of four we easily have leftovers for lunches or even another dinner.
I don’t know about you, but when our kids come home from school they are absolutely starving. They will snack to the equivalent of a full of a full meal if given the option. I’ve been trying to have dinner on the table early so that when the kids come home from school they are digging right into dinner rather than snacking and losing their appetite. We don’t all come at the same time every evening, so sometimes it is nice to wait until we can all sit down together. Other nights it is nice to just have a hot meal on the counter that can be enjoyed at any time.
Healthier Options for Chicken and Noodles Recipe
If you’re interested in making this recipe as healthy as possible there are a few changes that you could make. We usually add a few tablespoons of butter, but I definitely think that you could leave this out. You could also use lower sodium chicken broth and the “heart healthy” versions of the cream of chicken soup. Another consideration is using whole grain egg noodles to bump up the fiber and nutrients. Lastly, you can watch your portion size that you dish up and make half your plate fruit and vegetables.

Slow Cooker Chicken and Noodles
Equipment
- Slow Cooker
Ingredients
- 4 each Chicken Breast Boneless Skinless
- 1 can Cream of Chicken Soup
- 32 oz Chicken Broth
- 12 oz Extra Wide Egg Noodles Use a 12 oz bag
- 4 tbsp Butter
- 1 tsp Garlic Powder
Instructions
- Gather ingredients.
- Place chicken breasts in a large crockpot.
- Add 1 ½ cartons of chicken broth, 2 cans of cream of chicken soup, and a few pats of butter (optional).
- Cover and cook on low for 4 hours.
- Remove chicken and place on a plate. Shred chicken using two forks.
- Return chicken to crockpot and add the entire bag of egg noodles. Cook with noodles for 45 minutes and stir occasionally.
- Serve with a side of vegetables or a fresh salad.
